This is a perfect, easy and quick recipe to make over the Holidays that is good for afternoon tea, a snack or a light dinner. Also you can substitute the vegetables with anything you may have laying around the kitchen that you need to use up.
1 cup self raising flour, sifted
375g zucchini, grated
1 large onion, finely chopped
200g leftover Christmas Ham or bacon, chopped
1 cup grated cheddar cheese
1/4 cup vegetable oil
Preheat oven to 170 degrees Celsius. Grease and line a 30cm x 20cm tin. Put a small portion of cheese aside to sprinkle on top. Beat eggs in a bowl until combined. Add flour, stir until smooth, then add all other ingredients and stir together. Put in tin and sprinkle the top with the cheese set aside. Bake for 30 minutes or until cooked through. Cut into slices and serve on a plate with cherry tomatoes and mint to decorate. ENJOY!!
